{Recipe} Five healthy pumpkin breakfast ideas
They say you only have one true love, but when it comes to food I have two: pumpkin and breakfast.
With the help of Pinterest, I've tried my share of pumpkin breakfast recipes — uniting my two loves in a fairytale dream with a yummily ever after ending ... in my tummy. These are my five favorite pumpkin breakfast recipes that I'll have on repeat this fall. Enjoy!
1. 2-Minute Pumpkin Quinoa from Oh She Glows
Super fast and delicious. Good for breakfast or lunch (or brunch)! I almost always have these ingredients on-hand in the fall so this is an easy go-to recipe.
2. Pumpkin Spice Protein Bars from yours truly
These taste too good to be healthy. But they're filled with protein, fiber and all those healthy fats. Bonus: Vegan and gluten-free.
3. Pumpkin Spice Latte from Free People Blog BLDG 25
I couldn’t find the original recipe I used to make mine but this one looks nearly identical. I skip the coconut milk and just use almond milk but the rest is the same. Healthier and even better than the PSL you love from Starbucks.
4. Pumpkin Pie Smoothie from Averie Cooks
I skip the caramel. Sometimes I add spinach and/or chia or flax seeds. It makes the color kinda weird but the flavor is the same. BOMB.
5. Pumpkin Pie Overnight Oats from Eating Bird Food
Last year, I’m pretty sure I ate this every day for a month. I kinda like it. ;)
